Barbaro Sauce: Authentic Cuban Heat from Miami

How to Choose the Right Heat for Cuban Dishes

Pick by the number. The Barbaro Mojo Cuban heat scale runs 1 to 10; the five sauces sit at 3, 6, 8, 9, and 10. The full heat guide explains how the scale works.

Mild: Jalabáo™, 3 of 10

Jalapeño and green bell pepper on the mojo base. The everyday bottle for eggs, black beans, arroz con pollo, and a Cuban sandwich. Guests who say they do not like spicy food end up using it.

Medium: Piñazo™, 6 of 10

Pineapple and Carolina Reaper on a pineapple-juice mojo base. Sweet first, then the punch. Tostones, grilled chicken, pork chops, fish tacos.

Hot: Best Day Ever™ (8) and El Havanero™ (9)

Best Day Ever™ is mango and habanero with a little Carolina Reaper underneath: wings, grilled meats, shrimp. El Havanero™ is habanero with tomato, red bell pepper, and sweet onion, the hottest of the everyday line: lechón asado, ropa vieja, pan con bistec, and anything slow-cooked where the heat can build.

Extreme: Matanza™, 10 of 10

Habanero and Carolina Reaper in limited runs, the only extreme sauce in the line. Use it on simple things, tostones or grilled fish, so the pepper shows. Shop Matanza.

Not sure where to start? The 4-pack has the four everyday sauces (3, 6, 8, 9) and ships free.
